Endive boats with mung beans, walnuts and pomegranate seeds

2 cups chopped parsley
1/2 cup chopped walnuts
1/2 cup pomegranate seeds
1 cup mung beans
1/4 cup fresh lemon juice
Salt and black pepper to taste
This makes for great party food – a dressed up salad with party favorite, pomegranate.
